Tips for using truffles: To keep the flavors intact, it is best to consume raw truffles in combination with ingredients with a neutral papillary perception. Raw meat, egg, pasta, risotto and butter are the best combinations. Also, scallops and sole go very well with truffles. Be careful with spices and herbs, apart from thyme which is the only one to enhance the taste. The white truffle should never be cooked because it cannot withstand high temperatures.
